The Easiest 3-Ingredient Side Dish You’ll Make All Year
There was a time when supper had to work around everything else—long farm days, hungry kids, muddy boots by the back door, and barely enough minutes left in the evening to stand over the stove. That’s when recipes like these became lifesavers.
These slow cooker Italian herb potatoes are the definition of simple comfort food. Just a handful of pantry ingredients, a slow cooker, and a few hours later, you’ve got tender, flavorful potatoes infused with herbs, garlic, and tangy Italian dressing.
It’s one of those wonderfully old-school Midwestern shortcuts that somehow turns out far better than you’d expect. The dressing slowly cooks into the potatoes, creating a savory, zesty coating that tastes like you spent far more effort than you actually did.
Whether you’re feeding your family on a busy weeknight, planning a potluck, or just need an easy side dish that practically cooks itself, this recipe delivers every time.

Slow Cooker Italian Herb Potatoes
Servings:
4–6 servings
Ingredients
- 2 to 2½ pounds small red or yellow potatoes, washed and halved
- 1 cup bottled Italian salad dressing (regular or zesty)
- ½ teaspoon kosher salt, or to taste
Directions
1. Prepare the Slow Cooker
Lightly grease the inside of a slow cooker (4-quart or larger) with cooking spray or a little oil for easier cleanup.
2. Add the Potatoes
Place the washed and cut potatoes into the slow cooker in an even layer.
If the potatoes are large, quarter them so they cook evenly.
3. Season Everything
Pour the Italian dressing evenly over the potatoes.
Sprinkle with salt, then gently stir until all the potatoes are coated in the dressing and herbs.
4. Cook
Cover and cook:
-
On LOW for 4–5 hours
or - On HIGH for 2–3 hours
The potatoes should be fork-tender while still holding their shape.
5. Finish and Serve
Give the potatoes one final gentle stir before serving to redistribute the flavorful juices and herbs.
Taste and add more salt if needed.
Serve warm straight from the slow cooker with some of the cooking juices spooned over the top.
